Pumpkin Soufflé

Finally pumpkin time - You need to try this delicous recipe for pumpkin soufflé!

Ingredients - serves 2
250g pumpkin puree
50g semolina
2 eggs
1 tbsp. butter
1/2 tsp. cinnamon
a pinch of grounded cloves
a pinch of grounded nutmeg
150ml milk
2 tbsp. sugar
some icing sugar for dusting
Method
Add milk, butter and sugar to a small pot and bring to a boil. Add in semolina and cook until it thickens. Remove from heat and allow to cool off a little. Seperate the yolks from the egg whites and beat up the egg whites.
Heat oven to 180°C. Combine the semolina batter with the pumpkin puree and stir in the egg yolks. Add in spices and mix well. Fold in the beaten egg whites and fill the batter into 2 greased small casseroles. Bake in preheated oven for about 25 minutes, until golden brown. Dust with icing sugar and serve immediately.
