A Heavenly Light Lemon Soufflé

A heavenly light soufflé with a hint of fresh lemon and some fresh thyme - a delicious final for a perfect dinner night!

Ingredients - serves 4
peel and juice of 2 lemons
100g semolina
500ml milk
4 eggs
2 twigs thyme
1 tsp. vanilla extract
4 tbsp. sugar
40g butter
some icing sugar
Method
Mix milk, sugar, vanilla extract and butter in a pot and bring to a boil. Add in semolina and cook at medium heat until it thickens. Remove from heat and set aside. Heat oven to 180°C. Seperate the yolks from the egg whites and beat up the whites, until stiff. Wash thyme and remove leaves.
Work egg yolks into the batter and fold in thyme, lemon juice and peel and beaten egg whites. Grease 4 soufflé dishes and fill in the batter. Bake in preheated oven for about 20 Minutes. Remove from the oven carefully and dust with icing sugar. Serve immediately.
