Apple Sheet Cake with Streusel

Here’s a classic Apple Crumb Cake (Apfelkuchen mit Streuseln) – easy, buttery, and comforting!

Ingredients
The batter:
220g butter
4 eggs
200g sugar
220g flour
1 tsp. baking soda
The apple topping:
600g apples
30g sugar
2 tbsp. cornstarch
1 tbsp. lemon juice
The streusel:
140g cold butter
190g flour
1 tsp. vanilla extract
170g sugar
1/2 tsp. cinnamon
Method
For the streusel, mix flour, sugar, cinnamon & vanilla extract. Add cold butter in pieces and work into streusel. Store in the fridge. Peel apples, remove stones and cut into cubes. Mix apple pieces with lemon juice, sugar & cornstarch in a large bowl & store in the fridge.
Heat oven to 180°C. For the batter, beat up butter & sugar until creamy. Add in eggs, flour & baking powder & whisk until creamy. Line a baking tray with parchment paper and fill the batter into the baking tray. Spread the apples on top of the cake. Spread the streusel on top. Bake in preheated oven for about 45-50 minutes.
