Apricot Dumplings

It is apricot season! You love those sweet little fruits as much as I do? Then you need to try this austrian classic dumpling dish! Soft and fluffy dumplings, filled with sweet apricots and served with crunchy buttered bread crumbs - easy to make and so delicious!

Ingredients (4-6 dumplings)
The dumplings:
250g curd cheese
1 egg
1 tbsp. sugar
4-6 apricots (dempends on size of the fruits)
4-6 pcs. sugar cubes
50g softened butter
3 tbsp. semolina
3 tbsp. breadcrumbs
1 tsp. vanilla extract
a pinch of salt
some icing sugar
The buttered crumbs
75g butter
70g (white) bread crumbs
60g sugar
Method
For the dumplings, stir together curd cheese, egg, vanilla extract, sugar and semolina and mix well. Add melted butter and fold in the breadcrumbs. Cover the bowl and let rest in the fridge for at least 30 minutes.
In the meantime heat the butter in a large pan until melted. Add the breadcrumbs and stir-fry until golden brown - be careful, the bradcrumbs may burn easily. Mix in sugar and set aside.
Wash the apricots, open with a knive (try to avoid to cut in halves) and remove stones. Divide the batter into 4-6 portions. With wet hands, coat each apricot with a portion of batter - make sure the whole fruit is covered in batter.

Bring plenty of slightly salted water to a boil. Put all the dumplings in the pot, using a large spoon and let simmer for 12 minutes at medium heat. Carefully remove the dumplings from the pot with a skimmer. Cover the dumplings in buttered breadcrumbs and dust with icing sugar.
