Aprikot Sheet Cake

Ingredients


1kg apricots

250g softened butter

250g icing sugar

250g flour

1 tsp. vanilla extract

6 eggs

lemon zest

some icing sugar for dusting



Method Heat the oven to 180°C. Cover a baking pan with parchment paper. Wash the apricots, remove the stones and cut into halves. Seperate eggs and beat egg whites until stiff. Stir together the softened butter with the icing sugar and vanilla extract until creamy. Add the egg yolks and beat up until creamy.


Add in the lemon zest. Work the flour into the dough with using a cooking spoon. Fold in the beated egg whites carefully. Transfer the batter to the baking pan and smooth down evenly. Add the apricots - place them carefully on the batter and avoid pressing down. Bake the apricot sheet cake in the preheated oven for about 35 minutes, until golden brown. Removc the cake from the oven and set aside to cool down completely. Dust with icing sugar before serving.
