Baked Goat's Cheese and Ratatouille

Delicate goat's cheese and delicious ratatouille veggetables - combined with a little bit of honey, this is the perfect summer's evening dish!

Ingredients - serves 2
1 small Onion
1 small zucchini
1 bell pepper
2 carrots
4 tomatoes
2 twigs thyme
2 twigs rosemary
200g goat's soft cheese
100g olives
some olive oil
some balsamic vinegar
1-2 tsp. honey
white bread
Method
Peel onion and chop finely. Wash zucchini, pepper and tomatoes. Remove Seed from zucchini and pepper and cut into cubes. Chop tomatoes roughly. Peel carrots and cut into cubes. Wash herbs, remove leaves and chop roughly.
Heat some olive oil in a pan. Add in onions and cook until translucent. Add in veggies and braise for 2 minutes. Now add in herbs, olives, a dash of vinegar and a dash of water. Season well with salt and pepper, cover and cook roast for about 15 minutes. Heat oven to 200°C. Sprinkle goat's cheese with some honey and bake in preheated ovem for about 8 minutes, until golden brown. Serve hot cheese with veggies and white bread.
