Basic Recipe for Jam: Peach & Rosemary

As spread, crêpe filling or as a topping for yoghurt and porridge - everybody loves jam! Be creative and try some fancy combinations! Here is a delicious recipe for a fruity peach jam with rosemary.

Ingredients for 5 jars
2kg fruits
1kg jam sugar (2 : 1)
3 twigs rosemary
1 tsp. vanilla extract
5 sealable jars
Method
You start by preparing the jars. Open the jars and place the jars and the lids in a large pot, fill up with water and bring to a boil. Cook for a few minutes, remove the jars from the water and set aside.
Bring a large pot with water to a boil. Wash peaches and add to the pot. Let simmer for 2 minutes, drain and dash with cold water. You can peel them easily now with your fingers. Cut the skinned fruits into halves and remove the stones.
Mix the peaches with the jam sugar and the vanilla extract in a large bowl. Transfer to a large pot and bring to a boil. Wash rosemary, cut twigs into halves and put in a fillable teabag. Seal the teabag and add to the pot. Let simmer at medium heat for 5 minutes. Remove the teabag and puree with a handheld blender.
Add the teabag with rosemary back to the pot and let simmer for another 5-10 minutes. Remove the teabag and fill the jam into the jars. Seal the jars and place them upside down on a kitchen counter. Allow to cool completely before moving.
