Ingredients - serves 2-3

1/2 kg shin of beef

3 large onions

2 bay leaves

3-5 juniper berries

2 garlic cloves

1 tbsp. tomato puree

1 tbsp. smoked pepper powder

1 tsp. marjoram

1/2 liter beef stock

1 tsp. cornstarch

some oil

salt and pepper

Method

Peel onions and chop finely. Cut beef into cubes (2 x 2cm). Heat some oil in a large pot, add beef cubes to the pot and sear from all sides. Remove beef from the pot and set aside.

Add some more oil to the pot, heat up and braise chopped onions lightly until translucent. Now add beef cubes back to the pot and pour in beef stock. Stir in tomato puree and spices. Bring to a boil, reduce heat, cover and let simmer at medium heat for about 2 hours. Add some more water, if required.

Mix cornstarch with 1 tbsp. cold water, stir into the goulash and bring to a boil again. Season well with salt and pepper and serve with dumplings or bread rolls.
