Ingredients - serves 4
230ml milkc
80g butter
1 tsp. vanilla extract
80g semolina
2 eggs
1 egg yolk
80g bread crumbs
2 tsp. cocoa
400g cherries
250g heavy cream
8 tbsp. sugar
1 tbsp. cornstarch
150g graham crackers
2 tbsp. chocolate streusel
Method
Mix milk, 2 tbsp. sugar, vanilla extract and 50g butter in a small pot and bring to a boil. Stir in semolina and combine. Remove from heat and allow to cool off a little. Add eggs and egg yolk and work into a smooth batter. Fold in cocoa and breadcrumbs, cover and let rest for 30 minutes.
Wash cherries, remove stones and set 16 pieces aside. Mix remaining cherries with 2 tbsp. sugar and 150ml water in a small pot and bring to a boil. Let simmer at medium heat for 5 minutes. Stir together cornstarch and 2 tbsp. water and add to the cherries. Cook until compote thickens, remove from heat and set aside.
Beat up heavy cream with 2 tbsp. sugar and store in a cool place. Mix graham crackers with remaining sugar and ground, using a blender. Melt remaining butter, mix with crackers and set aside. Divide batter into 8 portions. Coat 4 cherries with one portion of batter and form into a dumpling and press firmly - work with slightly wet hands. Repeat with the remaining cherries and batter.
Boil up plenty of slightly salted water in a large pot. Transfer dumplings to the pot, reduce the heat to a medium and let simmer for about 8 minutes.
Remove dumplings from the water using a slotted spoon. Serve Black Forest Dumplings with graham crackers, cherry compote and whisked cream. Sprinkle with cocoa and chocolate streusel.
