Blueberry Chocolate Tarte

A chocolatey crust filled with a light chocolate cream and fruity blueberries. This delicious Tarte is easy to make and tastes heavenly creamy! The perfect dessert for this summer.

Ingredients
200g white chocolate
100g heavy cream
200g all purpose flour
100g butter
250g blueberries
1 egg
1 tbsp. dark cocoa powder
100g sugar
zest of 1 lemon
dried legumes for blind baking
some icing sugar
Method
Mix flour, cocoa powder and sugar in a large bowl. Add egg and butter in pieces and quickly work into a smooth dough with your hands - add 1-2 tbsp. cold water if the dough is too dry. Cover and place in the fridge for at least 30 minutes.
Chop chocolate finely. Bring heavy cream to a boil, add in lemon zest and pour over chopped chocolate. Now stir until smooth and the chocolate dissolved completely. Set aside and allow to cool off a little. Place chocolate in the fridge for at least 30 mintes. Wash blueberries and set aside.
Heat oven to 180°C. Roll out dough on a flour dusted surface and carefully transfer to a greased tarte tin. Press down gently with your fingers. Prick the crust evenly with a fork to avoid dough losing shape. Place parchment paper on top of the crust and fill with dried legumes. Bake in preheated oven for about 30 minutes. Remove tarte crust from oven, set aside and allow to cool off completely. Then remove parchment paper and legumes.
Whisk cooled chocolate with a handheld electric mixer. Carefully fold in half of the blueberries. Fill chocolate cream into the crust and smooth down. Spread remaining blueberries on top and dust with icing sugar.
