Blueberry Soufflé

Looking for a summer dessert? These soft and delicious blueberry soufflés are exactly what you've been looking for! This fruity dessert is light, fluffy, easy to make and so delicious.

Ingredients - serves 4
75g semolina
3 eggs
300ml milk
4 tbsp. sugar
1 tsp. vanilla extract
200g blueberries
30g butter
zest of 1 lemon
icing sugar for dusting
Method
Mix milk, sugar and vanilla extract in a small pot and bring to a boil. Stir in semolina, mix well and remove pot from heat. Mix in butter and combine. Cover and let rest for 30 minutes.
Heat oven to 180°C. Seperate yolks from egg whites and beat up whites until stiff. Add yolks and lemon zest to the batter and mix well. Now carefully fold in beaten egg whites. Wash blueberries and mix into the batter.
Carefully fill the batter into 4 greased soufflé dishes and bake soufflés in preheated oven for about 25 minutes, until golden brown. Remove soufflés from the oven very carefully, dust with icing sugar and serve immediately.
