Blueberry Yogurt Cake

Here’s an easy and delicious recipe for a moist Blueberry Yogurt Cake!

Ingredients
1 cup (250 g) plain yogurt
1 cup (200 g) sugar
3 eggs
180g softened butter
1 tsp vanilla extract (or 1 packet vanilla sugar)
2½ cups (300 g) all-purpose flour
2 tsp baking powder
1 pinch of salt
1½–2 cups (200–250 g) blueberries (fresh or frozen)
zest of 1 lemon
Method
Preheat oven to 350°F (180°C). Grease the pan. Beat eggs and sugar until light and creamy.
Mix in yogurt, butter, and vanilla.
In a separate bowl, combine flour, baking powder, and salt. Gently fold dry ingredients into the batter. Fold in blueberries👉 If using frozen blueberries, do not thaw; lightly coat with flour.
Pour batter into the pan. Bake for 60 minutes, until a toothpick comes out clean.
Let cool and dust with powdered sugar if desired.
