Braised Tomatoes with Goat's Cheese & Honey

Ready for summer? This quick and easy dish is all about summer vibes. Fresh tomatoes, aromatic goat's cheese and sweet honey - all you need for a quick & delicious summer lunch!

Ingredients - serves 2


200g cherry tomatoes

150g goat's cheese

3 twigs basil

3 tbsp. olive oil

2 tsp. honey

1 tbsp. vinegar

1/2 tsp. dried thyme

salt and pepper



Method


Heat oven to 200°C. Wash tomatoes and cut into halves. Place tomatoes cut face down into a casserole. Season with salt and pepper and drizzle 2 tbsp. olive oil over the tomatoes. Place casserole into the preheated oven and bake for about 20 minutes.


Cut goat's cheese into slices. Heat up oven to 250°C. Stir honey with remaining olive oil and sprinkle over goat's cheese. Gratinate goat's cheese in the oven for about 4 minutes.


Wash basil and chop leaves roughly. Serve gratinated goat's cheese with braised tomatoes - sprinkle with vinegar and herbs.
