Bruschetta with Tomatoes and Burrata Cheese

Fresh tomatoes and heavenly creamy burrata on toasted italian bread - the perfect starter for this summer's barbecue season!

Ingredients - serves 4


8 slices of italian bread

4 garlic cloves

400g cherry tomatoes

1 burrata

1 onion

some olive oil

1 tbsp. balsamic vinegar

2 tbsp. finely chopped italian herbs

salt and pepper





Method

Heat up a pan and brown bread slices on both sides. Peel garlic and rub bread slices with garlic on one side. Peel onion and cut into thin slices. Wash tomatoes and cut into halves. Mix balsamic vinegar with 1 tbsp. olive oil and add to the tomatoes. Season well with salt and pepper.


Sprinkle bread slices with some olive oil. Layer tomatoes and onion onto the bread slices. Chop burrata cheese into small pieces and add onto the tomatoes. Garnish bruschette with chopped italian herbs and serve with fresh grounded salt and pepper.
