Caprese Pasta Salad

This summer's lunchbox fix! This quick and easy recipe turns the italian classic into a delicious pasta salad - fresh tomatoes, soft mozzarella cheese and tasty penne pasta with fresh basil and toasted pine nuts. This delicious pasta salad is all you need!

Ingredients - serves 3-6
160g penne pasta
200g mozzarella bambini
250g cherry tomatoes
3 twigs fresh basil
2 tbsp. pine nuts
some olive oil
some balsamic vinegar
salt and pepper
Method
Cook pasta in plenty of salted water, drain and set aside. Wash tomatoes and basil and let basil dry. Remove leaves from twigs. Remove stem from tomatoes and cut into quaters.
Drain mozzarella. Heat up a pan, add pine nuts and toast until they start to turn brown. Add all ingredients to a large bowl. Season well with salt and pepper, add some olive oil and vinegar and mix well. Serve as appetizer in 6 small glasses or as main in 3 large jars.
