Cheese Dumplings with Strawberries

A must try dish in strawberry season! These heavenly and delicious dumplings a filled with fresh strawberries and served with a fruity strawberry sauce. A classic austrian dish you will love - I promise!

Ingredients - serves 3
For the dumplings
6 large strawberries
250g curd cheese
30g buter
juice and zest of one lemon
1 egg
1 tsp. vanilla extract
1 tbsp. sugar
3 tbsp. semolina
3 tbsp. breadcrumbs
icing sugar for dusting
For the strawberry sauce
250g straweberries
2 tbsp. sugar
For the buttered breadcrumbs
30g butter
120g breadcrumbs
1 tbsp sugar
Method
For the dumplings, stir together curd cheese, egg, vanilla extract, sugar and semolina and mix well. Add lemon zest and melted butter and fold in the breadcrumbs. Cover the bowl and let rest in the fridge for at least 30 minutes.
In the meantime heat the butter in a large pan until melted. Add the breadcrumbs and stir-fry until golden brown - be careful, the bradcrumbs may burn easily. Mix in sugar and set aside.
For the strawberry sauce wash strawberries, remove stem and cut into halves. Mix one third of the strawberries and the sugar and blend until smooth. Mix in the rest of the strawberries and set aside.
Wash the 6 large strawberries and remove the stem. Divide the batter into 6 portions. With wet hands coat each strawberry with a portion of batter - make sure the whole strawberry is covered in batter.
Bring plenty of slightly salted water to a boil. Put all the dumplings in the pot, using a large spoon and let simmer for 12 minutes at medium heat. Carefully take the dumplings out of the pot with a skimmer. Cover the dumplings in buttered breadcrumbs and serve with strawberry sauce.
