Cherry Almond Casserole

It is cherry season! Let's start this year's cherry season with this delicious treat. This cherry bake dish is fruity, fluffy and tastes heavenly sweet and soft! Serve with some vanilla ice cream and it is all you need for a delicious summer treat!

Ingredients - serves 2
50g semolina
250ml milk
3 tbsp. grated almonds
3 tbsp. sugar
2 eggs
1 tsp. vanilla extract
250g cherries
1 tbsp. butter
2 tsp. icing sugar for dusting
cinnamon
Method
Mix milk, butter, vanilla extract and sugar in a small pot and bring to a boil. Stir in semolina, combine and remove pot from heat. Fold in grated almonds, cover and allow to cool off a little.
Heat oven to 180°C. Seperate egg whites from yolk and beat up egg whites until stiff. Wash cherries and remove stones. Add egg yolks and cinnamon to semolina and combine. Fold in beaten egg whites and fill into 2 small greased casseroles.
Spread cherries onto the batter and bake in preheated oven for about 25 minutes until golden brown. Dust with icing sugar and serve while hot.
