Cherry Cake with Streusel

Juicy cherries on a crispy shortcrust with crunchy streusel - this delicious cake is all about cherries! This delicious recipe is all you need, when craving for pie!

Ingredients
For the dough:
200g flour
100g butter
1 egg
80g sugar
a pinch of salt
For the filling:
1 can of cherries (320g)
20g cornstarch
40g sugar
For the streusel:
150g flour
100g sugar
1 tsp. vanillaxtract
100g butter
Method
Start with mixing flour with salt and 80g sugar in a bowl. Add butter in pieces, vanilla extract and egg and work into a smooth dough. Cover and let rest in the fridge for at least 30 minutes.
Heat the oven to 180°C. Roll out the dough on a flour dusted surface and transfer to a tarte tin. Heat up cherries with juice in a small pot. Mix 3 tbsp. of cherry juice with sugar and cornstarch. Add into the cherrie compote and let cook until thickens.
Spread the cherry compote on top of the dough into the tarte tin. For the streusel mix flour and sugar. Add in butter in pieces and vanilla extract and work into crumbles, using your hand. Spread the streusel on top of the cherries evenly. Bake in preheated oven for about 40 minutes, until golden brown. Then remove the cake from the oven and allow to cool off completely before removing from the tin.
