Cherry Semmelschmarren

Here's a traditional Cherry- Semmelschmarrn recipe – a rustic Austrian-German dish made from leftover bread rolls (like brioche or white bread rolls). It's a sweet dish similar to Kaiserschmarrn, but made with bread cubes instead of batter.

Ingredients - serves 2


3 stale bread rolls (e.g. white bread or brioche), cut into small cubes

1 cup (250 ml) milk

2 eggs

1 tbsp sugar (adjust to taste)

1 packet vanilla sugar or ½ tsp vanilla extract

1 pinch of salt




Method


Place bread cubes in a bowl. Pour milk over them and let sit for 5–10 minutes until softened.

In another bowl, whisk together eggs, sugar, vanilla sugar/extract and salt.

Add the egg mixture to the soaked bread and mix gently. Add in cherries . You should get a soft, moist mass – not too dry but not runny.


Heat the oven to 180 degrees. Fill the Schmarren into a oven form and bake in preheated oven for 40 minutes until golden brown. Dust icing sugar and serve warm.
