Cherry Sheet Cake with Streusel

This delicious cherry sheet cake is quick and easy! Perfect for a afternoon snack or add some whipped cream and serve as dessert.


Ingredients

For the cake:

300g cherries

300g all purpose flour

50g cornstarch

180g sugar

100g chocolate

1 Tbsp. cacao powder

150g softened butter

120g oil

5 Eggs

2 Tsp. baking powder

1 Tsp. vanilla extract


For the streusel

150g sugar

150g cold butter from the fridge

200g all purpose flour





Method

Heat oven to 170°C. Chop chocolate roughly and melt in water bath.

Beat up softened butter, sugar, vanilla extract and eggs until creamy. Stir in oil and melted chocolate. Mix flour, cornstarch, cacao and baking powder, add to the bowl and mix well.

Wash cherries and remove stem and stones.


For the streusel combine sugar, butter and flour using your hands. Line a baking tray with baking parchment. Pour in the batter and add cherries on top. Spread streusel evenly and bake in preheated oven for about 1 hour.
