Chickpeas and Aubergine Patties

Perfect for your office lunch! These delicious chickpeas and aubergine patties are cooked quickly and packed in even quicker. Served with a herbs cream dip, they are so delicious!

Ingredients
200g aubergine
450g canned chickpeas
120g flour
1 tsp. Baking powder
1 onion
2 garlic cloves
Some olive oil
2 tbsp. chopped parsley
Method
For the patties cut aubergine into cubes. Rinse chickpeas and set aside. Peel onion and garlic and chop finely. Heat some olive oil in a pan, add in onion and garlic and cook until glassy. Add in aubergine and cook for another 3 minutes.
Mix parsley and chickpeas and season well with salt and pepper. Mash roughly with a fork. Mix flour and baking powder and add to the chickpeas. Add in aubergine and combine. Heat some oil in a pan. Form little patties and sear them from both sides.
