Chocolate Babka

Chocolate babka is a soft and fluffy brioche with a rich chocolate filling. It fills your home with a heartwarming scent of chocolate. It definitely is an all-time favorite for sunday's breakfast!

Ingredients
500g all purpose flour
300ml milk
7g dry yeast
1 tsp. vanilla extract
150g sugar
2 eggs
130g softened butter
400g dark chocolate
1 tbsp. cocoa powder
2 tbsp. icing sugar
1 egg yolk
a pinch of salt
some icing sugar
Method
Mix flour, salt, 100g sugar and vanilla extract in a large bowl. Warm up 125ml milk (luke warm) and mix with dried yeast. Add eggs, 80g softened butter and yeasty milk to the bowl and work into a smooth elastic dough. Cover and let rest for about 30 minutes at room temperature.
In the meantime, chop chocolate roughly and melt over a waterbath. Mix melted chocolate with remaining butter, 75ml milk, cocoa powder, icing sugar and combine.
Remove dough from the bowl and punch down. Roll out rectangular on a flour dusted surface and spread chocolate filling onto the dough.

Starting at the long edge nearest you, tightly roll up the dough into a tight log. Cut the log into halves with a sharp knive.

With the cut sides facing up, twist bot parts in one another - place one strand on top of the other.

Line a loaf pan with parchment paper and transfer babka to the pan. Cover and let rest at room teperature for another 40 minutes.

Heat oven to 160°C. Mix egg yolk with remaining milk and brush babka with egg wash.
Bake babka in preheated oven for about 30 minutes until golden brown. Remove babka from the oven, allow to cool off a little and dust with icing sugar.
