Chocolate Mousse Cake

This rich and indulgent chocolate mousse cake is what chocolate dreams are made of!

It is made with a buttery tarte base, a heavenly light and creamy chocolate mousse and topped with chocolatey glaze, crunchy pistachios and coconut flakes. You will love it!

Ingredients


For the dough:

200g all purpose flour

100g butter from the fridge

80g sugar

1 egg

1 pinch of salt

For the mousse:

200g dark chocolate

1 egg

4 egg yolks

50ml water

90g sugar

500ml heavy cream

For the topping:

2 tbsp. pistachios

2 tbsp. coconut flakes

3 tbsp. molasses

3 tbsp. cocoa powder

3 tbsp. coconut oil

edible flowers





Method

For the dough mix flour and sugar in a bowl. Add egg, salt and butter in pieces and quickly work into a smooth dough with your fingers. Cover and let rest in the fridge for about 30 minutes.


Heat stove to 180°C. Roll out dough on a flour dusted surface and transfer into a springform lined with baking parchment. Prick the dough with a fork and bake in preheated oven for about 25 minutes. Take out of the oven, put aside and let cool off completely in the springform. For the mousse chop chocolate roughly, melt over a waterbath and set aside to cool off a little. Beat up egg and egg yolks until light and creamy. Heat up water and sugar in a small pan until sugar dissolves. Stir into the beaten eggs very slowly. Beat again until completely cooled off. Now fold in the melted chocolate carefully. Beat up heavy cream and fold in carefully.


Pour the mousse onto the base of the tarte in the springform, smooth down and put into the fridge for at least 6 hours. For the topping melt coconut oil, add cocoa powder and molasses and combine. Chop pistachios and coconut flakes roughly. Remove chocolate mousse cake from the springform and decorate with glaze, pistachios, coconut flakes and edible flowers.
