Classic Caprese Salad with Mozzarella di Bufala

The italian classic - Everyone knows it and everyone loves it! Fresh tomatoes and fragrant mozzarella di bufala, topped with fresh basil. Toasted pine nuts add extra flavour to this delicious salad.

Ingredients - serves 2
200g San Marzano tomatoes
100g red cherry tomatoes
100g yellow cherry tomatoes
1 mozzarella di bufala
4 twigs fresh basil
1 tbsp. pine nuts
some olive oil & balsamic vinegar
salt & pepper
Method
Wash tomatoes, cut San Marzano tomatoes into quarters and cherry tomatoes into halves. Transfer the tomatoes to a large bowl, add in oil and vinegar and season well with salt and pepper. Mix well.
Heat up a pan without oil. Add the pine nuts to the pan and toast until slightly brown. Remove the pine nuts from the pan and set aside. Wash basil, pat dry and remove the leaves from the stem. Drain the mozzarella and pull into pieces with your hands. Arrange the tomatoes on 2 plates. Sprinkle with pine nuts and basil leaves. Add the mozzarella pieces to the salad. Season well with salt and pepper and sprinkle with oil & vinegar.
