Creamy Gorgonzola Gnocchi with Spinach and Walnuts

These creamy gorgonzola gnocchi with fresh spinach are topped with crunchy walnuts. This rich and filling dish is so easy and quick! If you have more time, you should try to prepare homemade gnocchi for this recipe.

Ingredients - serves 3
500g gnocchi, cooked
1 small onion
2 cloves of garlic
300g baby spinach
150g gorgonzola
150ml heavy cream
1/4 cup chopped walnuts
2 tsp olive oil
Grated parmesan cheese for topping
salt, pepper
Method
Peel onion and garlic and cut into small pieces. Heat up 2 tsp olive oil in a pan and sauté onions for about 2 minutes. Wash baby spinach and add to the pan. Mix in garlic and let simmer for another 2 minutes.
Chop gorgonzola roughly. Stir in the cream, add gorgonzola and mix well. Let simmer until creamy.
Toss in the gnocchi, mix well and season with salt and pepper. Garnish with chopped walnuts and parmesan cheese.
