Creamy Porcini Risotto

An italian classic! You can't do anything wrong making this easy and delicious dish. Perfect to share with your friends! Add some extra flavour using fresh porcini.

Ingredients - serves 2


10g dried porcini

350 ml water

150 ml white wine

2 tbsp butter

160g risotto rice

1 small onion

25g grated parmesan

2 sprigs of thyme

salt and pepper

grated parmesan for serving




Zubereitung

Soak dried porcini in water. Peel onion and chop finely. Wash and dry thyme, remove leaves and chop finely.


Heat up butter in a pan. Add onions to the pan and sauté until translucent. Drain porcini, add to the pan and let cook for a few minutes. Now add the risotto rice and braise for another minute. Stir in the white wine and let cook until the wine is completely soaked up.

Now add water little by little while stiring and cook the risotto until creamy. Mix in grated parmesan and thyme and let rest for a few minutes. Season well with salt and pepper and serve with grated parmesan.
