Creamy Ricotta Cake

Creamy ricotta, fresh berries and a hint of lemon - this quick and easy cake is ready in just a few minutes and tastes just heavenly!

Ingredients
750g ricotta
250g caster sugar
2 eggs
1 tsp vanilla extract
70g cornstarch
Zest of 2 lemons
Fresh berries of your choise
icing sugar for dusting
Method
Heat oven to 180 °C. Use a handheld electric whisk to beat together the ricotta, eggs, sugar, vanilla extract, lemon zest and cornstarch. Whisk until smooth.
Line a springform pan with baking paper. Fill in the patter and bake for about 40 minutes.
Allow to cool completely. Remove cake from the pan and garnish with fresh berries and dust with icing sugar.
