Creamy Thai Coconut Soup with Salmon and Prawns

Here’s a rich, creamy Thai coconut soup with salmon and prawns — beautifully balanced with curry, lime, and herbs. It’s like a comforting Thai-style seafood chowder, ready in about 30 minutes!

Ingredients - serves 4
200g Salmon Filet
200g Prawns
100g Udon Noodles
200ml Chicken Stock
150g Curry Paste
300g Champignons
200ml Coconut milk
Peanut Oil
Cilantro
Salt and Pepper
Method
Heat the peanut oil in a large pot. Cut salmon in cubes. Clean Prawns. Add into the pot and fry for 2 minutes. Cut mushrooms into pieces and add to the pot. Add curry paste and fry for another minute.
Add in coconut milk and chicken stock. Also add in Udon Noodles and let simmer for 15 minutes. Season well with salt and pepper and serve with fresh cilantro.
