Cheese- Love - Here’s a clear, easy and authentic Kasnocken recipe!

Ingredients - serves 4
For the dumplings (Nocken):
300 g all-purpose flour
3 eggs
~150 ml water or milk (add gradually)
1 tsp salt
Optional: a pinch of nutmeg
For the cheese mixture:
200–250 g strong Alpine cheese(traditional mixes include Bergkäse, Emmentaler, Alpkäse, or a bit of Graukäse)
2 onions
2–3 tbsp butter
Method
Make the dough
Mix flour, eggs, and salt in a bowl.
Slowly add water or milk while stirring until you get a thick, sticky batter (not runny).
It should form bubbles when beaten well.
Let the dough rest for 10 minutes.
Cook the dumplings
Bring a large pot of salted water to a boil.
Press the batter through a spaetzle maker or scrape small pieces off a board into the water.
Cook for 2–3 minutes until the dumplings float.
Remove with a slotted spoon and drain.
Prepare cheese & onions
Slice onions into rings.
Fry them slowly in butter until golden brown; set aside.
Grate the cheese.
Combine everything
Add the hot dumplings to a large pan or ovenproof dish.
Mix in or layer with the grated cheese.
Let the cheese melt (either on low heat or briefly in the oven).
Top with the butter-fried onions and chopped chives.
