Dumplings with Spinach & Feta Cheese

This summers' favourite! These soft dumplings get extra fluffy by steaming them. Feta cheese brings some extra flavour. They are easy to make and so delicious!

Ingredients - serves 3
250g bread cubes
250ml milk
1 egg
150g feta cheese
250g baby spinach
80g butter
1 tbsp. pine nuts
1 garlic clove
salt and pepper
Method
Put the bread cubes in a large bowl. Beat up egg and milk and pour over the bread cubes. Cover and let rest for about 20 minutes.
In the meantime, wash spinach, peel garlic and chop very finely. Heat a pan without oil, transfer spinach to the pan and cook for 3 minutes. Set aside and allow to cool. Wring spinach out and chop finely. Melt 30g of butter and add to the bread cubes in the bowl. Add in garlic and spinach and combine with your hands. Crumble feta cheese with your fingers and carefully work into the mixture. Season well with salt and pepper.
Bring some water in a large pot to a boil and add in a steamer basket. With flour dusted hands, divide the dough into 6 portions and form to dumplings. Place the dumplings in the steamer basket and steam for 15 minutes - the dumlings get extra fluffy, when steamed.
Heat up remaining butter until melted. Toast pine nuts and serve dumplings with butter & pine nuts.
