Flammkuchen with Salmon and Dill

Here is a delicious and easy recipe for Flammkuchen with Salmon and Dill — crispy, fresh, and done in minutes.

Ingredients - serves 2-3
200 g (1 ½ cups) all-purpose flour
100 ml (⅓ cup + 1 tbsp) water
2 tbsp oil
½ tsp salt
(You can also use store-bought Flammkuchen or pizza dough.)
150–200 g crème fraîche or sour cream
1 small red onion, thinly sliced
150 g smoked salmon or fresh salmon, thin strips
½ bunch fresh dill, chopped
1 tsp lemon juice
Salt and pepper
Method
Mix flour, water, oil, and salt. Knead until smooth; let rest for 10 minutes.
Roll out very thinly on baking paper. Mix crème fraîche with salt, pepper, and lemon juice.
Add a little grated garlic if you like.
Spread the cream thinly over the dough. Add onion slices. If using fresh salmon, place it on the Flammkuchen now. If using smoked salmon, add it after baking so it stays soft.
Bake at 250°C / 480°F (or as hot as your oven can go) for8–12 minutes, until the edges are crisp and lightly browned.
Add smoked salmon now (if not baked). Sprinkle generously with chopped dill.
Best enjoyed hot, with a simple green salad or a chilled white wine.
