Fruity Chicken-Coconut Curry

Curry-Love! A delicious curry warms heart and soul - tender chicken, fresh veggies and creamy coconut milk. This quick and easy curry is topped with fresh baby spinach - incredibly delicious!

Ingredients - serves 2
400g chicken filet
1 red pepper
1 carrot
400ml coconut milk
a thumbnail-sized piece of ginger
2 handful fresh spinach
1 bunch of cilantro
1 tsp. garam masala
1/2 tsp. turmeric
juice of 1 lime
1 red chili
some sesame oil
salt and pepper
Method
Start with washing the chicken filet, pat dry and cut into mouth-sized pieces. Wash spinach and cilantro and chop cilantro leaves roughly. Peel carrot and cut into thin slices. Wash pepper and chili, remove stem and seeds, cut pepper into slices and chop chili finely. Peel ginger and mince.
Heat some sesame oil in a pan. Add the chicken to the pan and brown for 2 minutes.
Add in carrots, pepper and chili and cook für another 2 minutes. Pour in the coconut milk, add lime juice and spices and cook until creamy. Fold in spinach and cilantro, let simmer for one more minute and season well with salt and pepper. Enjoy with rice or fresh Naan Bread.
