Galette with Plums and Cinnamon

Finally it's Plum Season. Soft dough, crispy almonds and juicy plums - you need to try this delicious galette!

Ingredients
700g Plums
peel of a lemon
1 tsp. vanilla extract
300g flour
75g sugar
150g cold butter
1/2 tsp. cinnamon
1 egg
1 egg yolk
some milk
1 tbsp. greek yoghurt
2 tbsp. sugar for the filling
50g almond flakes
Method
Mix flour, sugar and lemon peel in a bowl. Add cold butter in pieces, vanilla extract and yoghurt and quickly work into a smooth dough with your hands. Wrap up in plastic wrap and store in the fridge for about 30 minutes. Wash plums, remove stones and cut into halves. Mix them with cinnamon and remaining sugar in a bowl.
Heat oven to 180°C. Remove dough from the fridge and roll out circular on a flour dusted surface. Place the nectarine slices in rounds in the middle of the tarte crust - leave a 4cm border around the edge. Spread the blueberries on top of the nectarines and fold the rim of the dough up and over the edge of the filling.
Beat up the egg yolk with some milk, brush the crust with egg wash and sprinkle with almond flakes. Bake in preheated oven for about 45 minutes. Cover with some tin foil after 25 minutes to avoid the galette getting to dark.
