Gnocchi with Pumpkin & Feta Cheese

Super easy, super quick and incredibly delicious! This delicious gnocchi dish is all you need this season! Full-flavoured pumpkin and aromatic feta cheese combined in a creamy sauce - simply delicious!

Ingredients - serves 3
500g gnocchi
200ml heavy cream
300g pumpkin
100g feta cheese
2 tbsp. pumpkin seeds
4 twigs fresh thyme
salt and pepper
some olive oil
Method
Wash pumpkin, remove seeds and cut into cubes. Wash thyme and chop finely. Heat some olive oil in a pan. Add in pumpkin and braise for 2-3 minutes. Pour in heavy cream, add in thyme and gnocchi, cover and let simmer at medium heat for about 10 minutes, until creamy. Season well with salt and pepper. Crumble feta cheese with your fingers. Serve gnocchi with crumbled feta cheese and pumpkin seeds.
