Here’s a hearty, flavorful recipe for Autumn Wild Boar Stew—perfect for cozy fall meals.

Ingredients - serves 4
800g wild boar shoulder
3 onions
4 garlic cloves
1 tbsp. paprika powder
125ml red wine
125g sour cream
1 tbsp. flour
250g bread cubes
100g dried plums
1 egg
250ml milk
Salt and pepper
Nutmeg
Rosemary
Some oil
Method
Cut the meat into cubes. Peel onions and garlic and chop finely. Set 1 half of onions aside. Heat some oil in a large pot and add in meat and roast for a few minutes. Remove meat from the pot, add some more oil and onions. Cook until translucent.
Reduce the heat and add in paprika powder. Add in wine and 250ml water. Now add in garlic and season well with salt, pepper and spices. Let cook for an hour on medium heat.
In the meantime fry remaining onions with some oil. Mix egg with lukewarm milk. Chop the dried plums. Now add plums and onions to the breadcrumbs in a big bowl. Pour in milk mixture. Combine and let sit for 20 minutes.
Grease a muffin tin and heat the oven to 180 degrees. Fill the dumling dough into the muffin tin and bake in preheated oven for 20 minutes. Mix sour cream with flour und add into the stew. Serve Stew with baked dumplings.
