Indian Red Lentil Dal

Red Lentil Dal is the perfect plant-based meal! It is a comforting and rich indian curry that's naturally vegan and packed with protein. Best enjoyed with fresh Naan bread.

Ingredients - serves 2


120g red lentils

1 tsp turmeric

1 onion

1 chili pepper

1 thumb-sized piece of fresh ginger

1 bunch of coriander

1 tsp cumin

1 tin of chopped tomatoes

1 tbsp sugar

Oil

Salt, Pepper




Zubereitung

Rinse lentils properly. Put together lentil, turmeric, a pinch of salt and 350ml Water in a pot and bring to a boil. Simmer for about 25 minutes on medium heat until lentils are soft - add some more water if necessary.

Peel onion and ginger and chop them into little pieces. Cut chili pepper into halves, remove seeds and stem and chop finely. Wash the coriander, shake it dry and chop the leaves roughly.


Heat up some oil in a pan. Add cumin and stir-fry for 1 minute. Add chopped ginger, chili and onion and fry together. When the onions start to brown, add the tomatoes, sugar and half of coriander. Let simmer for about 5 minutes.

Mix in the cooked lentils and let rest for a minute. Garnish with rest of coriander and serve with rice or fresh Naan bread.
