Irish Beef Stew with Guinness

The beef version of the classic irish stew. Dried plums and bacon bring some extra flavour to this savoury and heartwarming dish!

Ingredients - serves 4
700g beef shoulder
2 onions
2 garlic cloves
120g cubed bacon
350ml guinness beer
100g dried plums
1 bayleaf
salt and pepper
some oil
Method
Take beef out of the fridge and let rest for 30 minutes. Peel onions and garlic and chop finely. Cut plums into halves.
Cut beef shoulder into cubes (2 x 2cm). Heat some oil in a large pot and sear beef from all sides. Remove meat from the pot and set aside. Add bacon to the pot and cook until brown. Add onions and sauté until onions are translucent.
Add beef, garlic, plums and bayleaf to the pot, fill up with guinness and 1/2 a liter of water and bring to a boil. Reduce heat to a minimum and let simmer for about 2 hours. Add some more water, if needed. Season well with salt and pepper and serve.
