Kanelknuter - Norwegian Cinnamon Buns

Here’s a delicious Kanelknuter recipe. These are Norway’s beautiful twist on cinnamon rolls — soft, buttery dough filled with cinnamon sugar and tied into pretty knots.

Ingredients for 8-10 pieces


500g flour

225ml lukewarm milk

21g fresh yeast

80g sugar

230g softened butter

a pinch of salt

120g brown sugar

3 tsp. cinnamon





Method


Dissolve fresh yeast in the milk. Add milk, sugar, salt and 80g butter into a large bowl. Add in flour and work into smooth dough. Cover and let rest for about 1 hour.

Remove dough from the bowl and knead for another minute on a flour dusted surface. Roll out the dough rectangular, the long side facing down.


Spread the remaining butter onto the dough. Mix sugar and cinnamon and spread on top. Now fold the left and rigth edges of the dough to the middle, to form 3 layers. Cut the dough into 8-10 thin strings. Knot the doughstrings together and form buns. Line a baking tray with parchment paper and place the buns onto the baking tray.


Let rest for another 20 minutes. Heat oven to 200°C and bake buns in preheated oven for about 12 minutes, until golden brown. Dust with icing sugar - best served warm with a cup of hot chocolate.
