Lamb Loin with Roasted Vegetables

Here is a delicious and easy Lamb Loin with Roasted Vegetables recipe!

Ingredients - serves 2
400–500 g (14–18 oz) lamb loin
2–3 garlic cloves, lightly crushed
2–3 sprigs rosemary
1–2 sprigs thyme
Salt and black pepper
2–3 tbsp olive oil
2 carrots
1 red onion
200 g (7 oz) baby potatoes or diced sweet potato
2 tbsp olive oil
Salt & pepper
1 tsp sweet paprika
1 tsp dried oregano
Method
Preheat the oven to 200°C / 400°F. Cut all vegetables into bite-sized pieces.
Toss with olive oil, salt, pepper, paprika, and oregano. Spread on a baking sheet and roast for 30–40 minutes, until golden and soft.
Pat the lamb dry and season generously with salt and pepper.
Heat a pan over high heat, add olive oil. Sear the lamb on all sides for 1–2 minutes until nicely browned. Add garlic, rosemary, and thyme.
Place the lamb in the oven (you can put it on the same tray with the vegetables if they’re almost done). Cook for 8–12 minutes depending on thickness. Let the lamb rest for 5–10 minutes before slicing so it stays juicy
