Lemon-Mascarpone Cake

A classic lemon loaf cake with a nice twist! A bit of mascarpone makes the cake extra moist and salted pistachios add a nice crunch - you need to try this delicious loaf cake recipe!

Ingredients
220g cake flour
1 tsp. baking powder
peel and juice of a lemon
150g softened butter
220g sugar
2 eggs
150g mascarpone
150g roasted & salted pistachios
160g icing sugar
1 tsp. vanilla extract
Method
Whisk together butter, vanilla extract and sugar until creamy. Add in eggs seperately and combine. Mix flour and baking powder. Stir lemon juice and peel into the batter. Add in mascarpone and flour and combine. Heat the oven to 160°C. Grease a loaf cake tin and fill in the batter. Smooth the batter down and bake in preheated oven for about 60 minutes until golden brown.
Remove the cake from the oven and allow to cool off a little. Remove the cake from the tin and allow to cool completely. Mix icing sugar with 3 tbsp. of water and chop the pistachios roughly. Cover the cake with sugar icing and spread the pistachios on top.
