Lemon, Ricotta & Spinach Pasta

This quick and easy pasta dish is ready in under 15 minutes and makes a perfect weeknight meal. The heavenly creamy pasta sauce doesn't require any cooking - This makes a simple und delicious pasta dish, full of flavour!

Ingredients - serves 2
160g pasta (f.e. Linguine Piccole)
125g ricotta
125g baby spinach
zest & juice of 2 lemons
1 small onion
1 clove of garlic
2 tbsp toasted pine nuts
30g grated parmesan
1 tbsp olive oil
salt and pepper
Method
Bring plenty of salted water to a boil. Cook pasta and set 1/4 cup of pasta water aside.
Wash spinach and let dry. Peel onion and garlic and chop finely.
Heat olive oil in a pan. Add onions and let cook until translucent. Add spinach and garlic to the pan and sauté for about 2 minutes.
Stir in ricotta, lemen zest and juice and mix well. Toss in cooked pasta, add pasta water and grated parmesan and let simmer at medium heat until water is gone. Season well with salt and pepper and garnish with toasted pine nuts.
