Lemon Ricotta Tarte with Thyme

This lemony tarte is just heavenly creamy! Add some thyme for extra flavour - you'll love it, I promise!

Ingredients
Dough:
200g flour
100g butter
90g sugar
1 egg
1 tsp baking powder
1 tsp vanilla extract
a pinch of salt
Filling:
500g ricotta
2 eggs
200g sugar
zest & juice of 2 lemons
3 tbsp breadcrumbs
1 tsp thyme
icing sugar for dusting
Method
Mix flour with baking powder, salt and sugar in a bowl. Add butter in pieces, vanilla extract and egg and work into a smooth dough with your hands. Add 2 tbsp cold water to the mixture, if dough is too dry.
Put dough into a coated tarte tin and press down to bottom and sides with your fingers. Regrigerate for about 30 minutes.
Heat oven to 180°C. Stir together ricotta, eggs and sugar in a bowl. Add lemon zest & juice and mix well. Fold in breadcrumbs and thyme. Pour the mixture onto the dough into the tin and bake for about 50 minutes. Take out of the oven and let cool. Dust with icing sugar and garnish with thyme.
