Lentil Patties and Cucumber Salad

The perfect snack for a hot summer day at the beach! These delicious lentil patties are super quick and easy to make and the perfect take-out meal! Cucumber salad adds extra freshness!

Ingredients - serves 2-3
1 cucumber
2 tbsp. skyr
1 can lentils (400g)
1 egg
2 tbsp. flour
2 tbsp. bread crumbs
1/2 onion
2 garlic cloves
oil and vinegar
salt and pepper
oil for frying
Method
For the lentil patties, drain the lentils and mix two thirds of the lentil with 1 tbsp. of olive oil and puree with a blender. Fold in the remaining lentils. Peel garlic and onion. Chop onion finely and mince garlic. Add egg, garlic and onion to the lentils and combine. Season well with salt and pepper and fold in flour and breadcrumbs.
For the cucumber salad, peel cucumber and work into thin slices using a vegetable slicer. Mix cucumbers with skyr, season well with salt and pepper and add in olive oil and vinegar to taste. Heat up some oil in a large pan and fry the lentil patties from both sides, until golden brown. Serve with cucumber salad.
