Mapo Tofu

Ready for the real deal? This authentic mapo tofu recipe is all you need! A quick and easy dish. Simply delicious and it brings along all the flavours!

Ingredients - serves 2
1-2 red chilis
1 tsp. sichuan pepper
a thumbnail sized piece of ginger
2 garlic cloves
1 spring onion
120g minced pork
2 tsp. hot bean sauce
400g tofu
120g rice
2 tsp. cornstarch
1 tsp. sugar
100ml oil
Method
Peel ginger and garlic and chop finely. Wash chilis, cut into halves, remove stem and chop finely. Heat up half of the oil in a large pan. Add chilis to the pan and stir-fry for 2 minutes. Set chili-oil aside. Cook rice.
Heat remaining oil in the pan, add sichuan pepper and cook at medium heat for 2 minutes. Add ginger and garlic and stir-fry for another 2 minutes. Increase heat, add minced pork and sear for 1 minute. Deglaze with 150ml water, add hot bean paste and cook a few minutes at medium heat.
In the meantime, wash spring onions and chop finely. Drain tofu and cut into cubes. Mix cornstarch with 1 tbsp. of water and sugar and add to the sauce. Stir well, add chili-oil, spring onions and tofu and simmer at medium heat for 2 minutes. Serve with cooked rice.
