Marble Cake with Cherries

Here is a delicious, moist Marble Cake with Cherries recipe!


Ingredients (for a 9–10 inch round pan or large loaf pan)


300 g (2 ½ cups) all-purpose flour

200 g (1 cup) sugar

200 g (1 cup) soft butter

4 eggs

1 packet vanilla sugar or 1 tsp vanilla extract

1 packet baking powder (about 2 ½ tsp)

120 ml (½ cup) milk

2 tbsp cocoa powder

1 jar sour cherries, drained (about 350 g / 12 oz drained weight)

1 pinch of salt





Method


Preheat the oven to 175°C / 350°F. Drain the cherries well; save a little cherry juice.

Cream butter, sugar, and vanilla until light and fluffy. Add the eggs one at a time.

Mix flour, baking powder, and salt. Add to the batter alternating with the milk.


Divide the batter in half:

Leave one half as the light vanilla batter.

Mix cocoa powder + 1–2 tbsp cherry juice into the other half to make the chocolate batter.

Pour the light batter into a greased pan.


Spread the cherries evenly on top.

Add the chocolate batter on top and swirl lightly with a fork to create a marble pattern.

Bake for 50–60 minutes, until a toothpick comes out clean.

Let cool fully; dust with powdered sugar if desired.
