Mediterranean Quiche with Potatoes and Feta Cheese

This delicious mediterranean quiche brings along all the flavours! It is quick and easy and just perfect for a snack on the go or office lunch!

Ingredients
For the dough
1 egg
200g all purpose flour
100g cold butter from the fridge
a pinch of salt
For the filling
500g potatoes
4 eggs
250ml heavy cream
80g dried tomatoes
80g black olives
100g feta cheese
salt and pepper
a pinch of nutmeg
Method
Mix flour and salt in a bowl. Add butter in pieces, 2 tbsp. cold water and egg and quickly work into a smooth dough with your hands. Wrap up dough in plastic wrap and let rest in fridge for at least 30 minutes.
In the meantime, cook potatoes in water, peel and cut into thin slices. Line a springform with baking parchment. Heat oven to 160°C.
Roll out the dough on a flour dusted surface. Put the dough into the springform and press down with your fingers. Carefully press the dough up the sides - about 3-4cm high.
Beat up eggs and cream. Season well with salt, pepper and nutmeg. Chop dried tomatoes roughly and remove stones from olives. Layer potato slices in the pan. Add tomatoes and olives on top. Pour in the egg mixture. Crumble feta and spread on top. Bake in preheated oven for about 1 hour.
