Millet Falafel, roasted Chickpeas and creamy Yoghurt

Here's a simple and tasty millet falafel recipe – It's perfect as a healthy snack, wrap filling, or salad topping.

Ingredients - serves 2
75g millet
2 tbsp. olive oil
2 garlic cloves
1/2 tsp. cumin
1/2 tsp. tumeric
1-2 tbsp. all purpose flour
1 can chickpeas (400g)
150g yoghurt
some nutmeg
some oil
salt and pepper
Method
Wash millet and cook in plenty of salted water. In the meantime peel garlic cloves and chop finely. Mix garlic with cooked millet. Drain chickpeas, heat some olive oil in a pan and braise chickpeas until golden brown. Work chopped garlic and flour into millet and season well with salt and pepper. Add in spices. With wet hands, form small balls from the batter.
Heat oven to 180 degrees, place falafel on a baking tray and bake for 20 minutes until golden brown. Arrange the yoghurt on the plates, spread roasted chickpeas on top and serve with millet falafel.
