Nougat-Semolina Dumplings

Here’s the recipe for Semolina Dumplings with Nougat Filling!

Ingredients - serves 4
The dumpling:
180g semolina
120g butter
500ml milk
2 tbsp. sugar
2 eggs
1 tsp. vanilla extract
125g firm nougat
icing sugar
The buttered bread crumbs
150g bread crumbs
4 tbsp. sugar
100g butter
1 tsp. cinnamon
Method
For the dumplings, mix milk, butter, sugar and vanilla extract in a pot and bring to a boil.
Add in semolina and cook until the mass comes off the bottom of the pot. Remove from heat and allow to cool. Work the eggs into the batter, using a spoon. Cover the pot and set aside.
Seperate the nougat into 8 portions and form into balls. Also seperate the dumpling batter into 8 portions. Now coat each portion of nougat with a portion of batter and form to dumplings. Bring a large pot with plenty of slightly salted water to a boil. Cook the dumplings in slightly salted water for about 15 minutes.
In the meantime, heat the butter in a large pan. Add in bread crumbs and roast until golden brown. Add in sugar and cinnamon, combine and set aside. Remove the dumplings with a skimmer, drain and cover with buttered bread crumbs. Dust with icing sugar & enjoy. Best served with a fruity compote or vanilla custard.
