Panettone - Traditional Italian Christmas Cake

Here is a easy and delicious Panettone recipe — traditional Italian style, soft, tall, and fragrant.


Ingredients


700g flour

42g fresh yeast

250ml lukewarm milk

150g sugar

200g softened butter

1 egg

3 egg yolks

peel of 1 lemon

a pinch of salt

200g chocolate






Method


Dissolve fresh yeast in warm milk. Mix flour, sugar & salt in a large bowl. Add in butter, egg, egg yolk, lemon peel & yeasty milk and work into a smooth elastic dough. Cover and let rest for about 45 minutes - it should double in size.


Chop chocolate and knead into the dough. Line a pot with baking paper and transfer the dough to the pot. Cover and let rest for another 45 minutes. Heat oven to 170°C. Bake in preheated oven for about 45 minutes, until golden brown - cover with a piece of tin foil, to avoid the cake turning too dark. Remove from oven, allow to cool off completely, then remove from the pot & dust with icing sugar.
