This delicious pasta dish is all you need for those summer vibes to kick in! Delicate pasta and fresh aubergine in a tasty tomato sauce. This delicious recipe brings you directly to the italian coast.

Ingredients - serves 2


200g penne pasta

100g ricotta cheese

400ml peeled tomatoes in a can

1 aubergine

1 onion

2 garlic cloves

some thyme

some olive oil

salt & pepper





Method


Peel onion and garlic and chop finely. Cut aubergine into cubes. Heat some olive oil in a pan and cook onion and garlic until glassy. Add in aubergine and cook until the aubergine turns brown.


Chop canned tomatoes roughly and add in the pan including the tomato juice. Add in the thyme and season well with salt and pepper. Let simmer at medium heat for about 6 minutes. Cook pasta in plenty of salted water, drain and toss into the sauce. Serve with some fresh ricotta cheese.
